This 18th-century building in Vélez-Málaga sat abandoned for two decades before a British architect and his wife transformed it into an eight-room inn in 2007. The couple kept the 300-year-old, nine-foot-tall wooden entryway doors and the central courtyard's original checkerboard-tile floor, and added iron beds and heavy wooden shutters to the rooms to maintain the old-world vibe. For spectacular views of the village, head to the roof and settle into one of the chaises along the edge of the pool.
