Throughout India, and particularly in the northwestern province of Rajasthan, palaces, castles, and forts are being turned into luxe B&Bs—known as heritage hotels—run by the families who've inhabited them for generations. Shahpura Bagh, a 19th-century royal summer retreat, put a modern twist on the heritage concept by adding a 72-foot-long infinity pool earlier this year. The 10 guest rooms reflect the property's noble past, with heirloom furniture, 100-year-old oil paintings, and photographs of the 45-acre estate from the 1920s and 1930s. And daily breakfasts of alu tikki (spiced potato cakes) and organic yogurt made with milk from the family's dairy cows give guests a real taste of tradition.
